There are four kinds, generally: organic (for everyday use), metallic (i.e., semi-metallic, somewhat more durable), ceramic (a step up), and carbon-fiber (the most resilient, with the best stopping power). What they all do is contact and rub against the system's brake rotors. This produces the friction that the vehicle uses to slow down and stop.

How to replace them is fairly simple, whether you drive a van like Chrysler Town & Country, a truck like Dodge RAM 1500 or RAM 2500, a Jeep Grand Cherokee SUV, or otherwise.
